How to know which service included with JR Pass

Hello,

I'm interested in JR pass and having few questions:

  1. How to know which services included with JR Pass when using google maps , showing many routes direction ?
  2. How to reserves seat ? if train is full , are we able to board the train without seat or have to wait for next train ?
