Hi Daniel, nice to virtually meet you!
I will be travelling around Japan for 18 days. Do you recommend me to buy a 14-day pass and buy single tickets for the rest of the days or to buy a 21-day pass?

It would very much depend on where you want to travel in Japan? With 18 days in Japan it kinda feels silly to buy a 21-day pass, though I can think of scenario's where this would be beneficial.
To give you a bit of starting advice, I'd go for the 14-day JR Pass and use it to travel between different cities. Then either at the start or end of your travel stay in the city, like Tokyo, and buy normal tickets for local travel.
