Hi,
I would like your advice: should we always make a reservation for the Shinkansen or other regional train? What if our initial itinerary is changed?

Hi there,

I would recommend it, just to be secure of seating but it is not required to reserve most trains in advance. The Narita Express, Hayabusa and Kagayaki are the only trains that are 100% reserved seats. You can always go to a ticket window and have your tickets changed for free using the JR Pass.
