I know that there are some limitations of JR pass that cannot use on Nozumi and Mizuho shinkansen.
Is it possible to still ride Nozumi and Mizuho Shinkansen given that I'm willing to pay the extra fare difference?
Anyone knows?

Hi there,
You have to buy full fare tickets if you wish to use a Nozomi or Mizuho train. Therefore I would use Hikari or Sakura Shinkansen instead, these are the same trains but make a couple more stops on the route.
