I used hyperdia and it says we can get to Kawaguchiko from tokyo all the way using our JR pass. some forums say the Holiday rapid mtfuji1 is only seasonal. We will be using it on May 31,2019 from Tokyo. Will this train be operating in May of 2019?

Yes, this train is a seasonal train.
The schedule is released about 3 months in advance, as of now, I can't tell whether it will run in May.
