Travelling on dec 25

While the time tables for the winter have not been released, the route will look as follows:

From Haneda Airport take the Monorail to Hamamatsucho (the last stop of the Monorail), there you can transfer to the JR Yamanote line to Tokyo station (about 6min). From Tokyo station you can use the Shinkansen to Osaka. The whole trip should take about 4-5 hours.

About 3 months in advance, though they usually don't change much from current time tables. Trains are very frequent though, so you never have to wait long.

Is dec. 25 a holiday in japan? Please define frequent. If you base it on the current timetable, what time would i be able to start my journey if, lets say I arrive in haneda around 2pm? How frequent are The shinkansen running from tokyo to osaka?

Trains are pretty frequent, the Hikari that you can use with the JR Pass departs at least every 30 minutes. Than there are about 4-6 Nozomi services, which carry most passengers. There are also slower Kodama services on top of that. Trains carry over a 1000 seats each so there are plenty to go around. The real busy period starts around the 27th so the 25th is fine to travel on.
