I have just received my pass for travel next month - now we already know where we are going on what days and have a general timeframe - do you need to reserve places on certain trains for say travel between Tokyo-Kyoto, Kyoto-Hiroshima or arewe okay to just turn up on the day with our JR pass and get on any train?

Yes that's the magic of the JR Pass, you can just go to the station and get on the train when you feel like it. Trains depart very frequently on the Shinkansen (at least every 30minutes). So just hop on and enjoy the ride!
