That is indeed correct, the JR Pass is valid on all Shinkansen routes. Some train types are not included, which are the Nozomi and Mizuho trains. There are plenty of alternatives such as the Hikari and Sakura Shinkansen which travel the same route as the Nozomi/Mizuho. The only difference is that they make a couple more stops on the way.

Although Hyperdia places is in the same category, the Hayabusa Shinkansen is covered.
