Would it be worth getting the 21 Day pass for this kind of itinerary? I'm still in the early stages of planning and would really like an outside opinion on it.

I made a quick list of ticket prices to find out.
Sendai - Tokyo ¥ 10,890
Tokyo - Nagoya ¥ 10,880
Nagoya - Osaka ¥ 6,350
Osaka - Kyoto ¥ 560
Kyoto - Tottori ¥ 9,760
Tottori - Nagasaki ¥ 21,460
For a total of ¥ 59,900 the 21 day JR Pass is 59,350. The 21 day JR Pass is slightly cheaper as you can see. At the same time it does offer you 21 days of unlimited travel, so any additional travel with go towards your savings.
