I will arrive Japan on 26 Dec 13 with my family 6 person (1 infant.)
I will change JR rail pass on 28 Dec 13.
Can I reserve seat at Shinkansen from Osaka to Tokyo on 30 Dec 13 , and Tokyo to Osaka on 2 Jan 14?
I afraid I can reserve seat on long new year holiday or not.
Which way is better to go from Osaka to Tokyo on that public holiday?
Or I should ask my friend at Japan to reserve Shinkansen seat at the station.

I think that you will be able to get seats if you make the reservations on the 26th. You can do so the moment when you are in Japan, even if you have not yet started using your JR Pass.
I think that both Osaka and Tokyo are good to stay for the new year. If you want to join the big crowd outside for a count down, head to Shibuya crossing (Tokyo) to celebrate together.
