I will be buying a 5 day pass and a 3day pass because in between I have 2 days which I do not need a JR pass.
when I exchange the ticket at the JR office when I reach Fukuoka, can I exchange both at once or just one first then the other later?

Hi there!
Both options are possible. When exchanging a JR Pass you can select a first day of use up to 30 days in the future. You can also hold on to the 2nd voucher and exchange it later on.
