I'm happy to help! The Nationwide JR Pass options are available for 7, 14, or 21 consecutive days. The JR Pass covers JR-operated trains, including local services and the Shinkansen, with the exception of the Nozomi and Mizuho trains.
Once you arrive in Japan, you can take your physical exchange order voucher to a JR Pass exchange office to activate your pass. This can be done at both Haneda and Narita airports. Please find the full list of JR Pass exchange offices here.
Each traveller is required to have their own pass if you are travelling together. Regarding specific seat requirements, I recommend visiting a JR ticket office (Midori-no-madoguchi) and asking for assistance; the staff will be happy to help you.
