Hi there,
Yes, you can - but the price difference is significant. For example, on Tokyo to Kyoto - you'd have to pay the Shinkansen Green fare of ¥ 10,680.
This makes the upgrade price rarely worth it, it may be better to get a green JR Pass from the start.
