If you stay locally in Tokyo it is generally better to buy tickets locally or better yet use a Suica card to move around. There are multiple transport companies in Tokyo.

Something you may be interested in is a Tokyo Metro All Day Pass for 710 yen which allows for unlimited Metro Travel within Tokyo for a single day. It's a good deal when you go sightseeing.

For the rest, Suica is your friend. It is accepted virtually everywhere and makes for very convenient travel.

Then should i just purchase the SUICA + N'EX round trip package (Green Car @ JPY8000)? This way i secure return trips to and from Narita airport. And I will be able to use the SUICA card to travel to Hakone and Disneyland as well, as long as the card has sufficient value?

Yes getting a Suica + N'EX package is a great idea, either Green or Ordinary class. Which includes a discounted ticket on the Narita Express and the Suica card is very convenient too. It is valid on pretty much every kind of transport method in Tokyo (even some taxis) and removes the need to buy separate tickets completely.
