Regarding seat reservation, would be possible to make reservation online? It's my understanding checking the the blog that's only possible in the station. We are going on Apr 14th - Apr 22th. Is this period critical due to blossom season? Is there any chance that we cannot get seats?

As you will miss the Japanese national holiday period (Golden Week) which is from the 29th of April to the 5th of May, you should have no problems reserving seats for travel. If you want to make sure you will have seats on specific trains during your trip, I advise reserving all your seats on arrival in Japan. If you present a printed itinerary to the JR staff at the ticket counter with your Japan Rail Pass, they will be happy to make reservations for each of your legs in advance.
