We plan to purchase the 21 day JR Pass. On the day that we arrive at Narita airport, are we able to reserve seats for our entire trip? Should I just bring a calendar with the dates or do I need to be more specific by printing out the Hyperdia's schedules?

It is indeed possible to reserve all your tickets, once you arrive at Narita Airport.
It is smart to bring a list of printed routes, including dates and time of travel. This will greatly speedup the process and the JR Staff will be thankful as well.
