Hi,
I'm arriving at Narita on Monday.
Is it possible to exchange the voucher for the JR Pass but make the activation date on the following day (Tuesday)?

If it's possible, can I book train tickets at the same time (assuming the activation is on the next day)

Yes, that's possible. You could even book your whole trip at this point if you want.
