How do the days decrease?

Hi,
How do the days decrease when using the pass?
For example if I had the 7 day pass, would it only last 7 days:Monday-Sunday or would I be able to use it 7 different days that aren't consecutive?

The JR Pass is counted in full consecutive days. All the details are below:
