Will a 7 day pass work for me?

A 7 day JR Pass will be worth it, as long as you cover Tokyo - Osaka ... Kyoto - Hakone - Tokyo with it.

You can use the Shinkansen and the JR Pass to travel to Hakone. The station is called Odawara. From there however you will still need additional local transport to explore Hakone.

Here's another question: Can I use the JR Pass to travel from HND to Tokyo, and from Tokyo to NRT?

If so, would it be more worth it to get the 14 day pass, or stick with the 7 day pass and buy individual tickets for the airport trips (and local travel in the cities)?

Yes, you can access both HND and NRT using the JR Pass.

I already took this into account and would stick with a 7 day pass and normal tickets :) Though maybe if you also want to do some day trips from Tokyo, then a 14 day pass may be worth considering.
