You can't use the Nozomi train but can use the Sakura and Hikari trains on the same route.

I suspect you are using Google maps, which is not showing the Hikari trains, you may want to use www.hyperdia.com instead :)

Mmm I was using Hyperdia but when I unselected the Nozomi train, nothing else came up!

Had the same issue sometimes, think Hyperdia may be undergoing some maintenance or something. You can use Navitime instead:
