Are there such Apps to check schedule and route?
Since JR Pass cannot be used for the fastest train, are there 1st Class Cabin in the reminder?
Those non reservation cabins, are there 1st Class Cabins?
Or there is no need to buy 1st since most time not available?

1.) There are no official apps that list all times offline, this is due to the sheer amount of services in Japan and you'd need a large offline database to use store them all.
2.) Yes, you can find Green Class (1st Class) on most other services.
3.) All Green Class seats are by reservations only.
Nearly all bullet trains and limited express trains have Green Class, local trains do not.
