I arrive Sat. night at Narita and leave the next Sat. evening. If I use the seven-day pass the first Sat. night to go to Tokyo will it still be good to use the next Sat. morning to get back to the airport or is that considered an eighth day? Thanks.

Hi there!
The first day of use is counted as a full day, no matter what time you start using it. Please be careful of this when planning. My suggestion would be to buy a ticket to Tokyo upon arrival and return using the JR Pass, there's a 1,500yen ticket available for the Narita Express, perfect for use upon arrival.
