My mom and I will be travelling to Japan in August. We'll be arriving in Narita airport at 4:00 PM, but planning to head to Fukuoka on the same day.
Are there trains that go from Tokyo/Narita airport at around 9:00 or 10:00 pm? If so, do we have to transfer or is there a train that goes straight to Fukuoka from Tokyo/Narita airport?

I am afraid that there is no night train from Tokyo/Narita to Fukuoka. Trains stop service around midnight and I am afraid that you may not make it in time to Fukuoka if you plan to take a late train. You can get into Tokyo from Narita from 9/10 pm but Fukuoka may be impossible. It would be better to stay the night in Tokyo or somewhere on the route and travel on the following morning.

If I'm not mistaken from Tokyo to Fukuoka you will have to switch train at Shin-Osaka. Is that right?
If so, What's the latest train that goes from Shin-Osaka to Fukuoka?

That's correct, there is a transfer at Shin-Osaka (good excuse to buy some lunch).
You can check the train schedule via www.hyperdia.com, I expect the last train to depart around 9pm.
