7 days pass is flexible on days, can be skipping days? Only accounting days when I used the pass? For example number 1 day is monday, number 2 say in thursday and so on?

Hi there,
The JR Pass is valid for 7/14/21 consecutive days after its activation date. Even if you don't use the pass on a certain day, it will still count as one of your days used up.
