Hi there! The JR Pass will cover all your listed travel including reservations so you should be all set!

Most people go to see the snow monkeys in Jigokudani, which is best reached by non-JR Nagano train to Yudanaka. Note that Nagano is actually pretty far to reach by train from Hakuba as it is in another valley of the alps you have to go down and then back in again.
