I would like to get an opinion whether the 7 day or 14 day pass is best, or if there is a better way to organize our trip!
My husband and I will be arriving in Tokyo on October 14th and traveling to Kyoto on October 17th. Then, we will be traveling to Hiroshima on October 23rd, and finally back to Tokyo on October 25th, and flying out of Tokyo on October 27th.

A 14 day JR Pass is a good option if you travel Tokyo - Kyoto - Osaka - Hiroshima and back to Tokyo. I do recommend putting Hiroshima in between Kyoto and Osaka, as going straight from Hiroshima to Tokyo is quite a long trip and this way travel time is better spread around.
