Is it possible to do a day trip from Shibuya- Matsumoto- Shibuya if we would like to visit Matsumoto castle for cherry blossom?
or we should stay for one night and go to Kyoto the next morning?
And for our itinerary :
Narita airport - Tokyo - Matsumoto - Kyoto - Osaka - Kobe - Narita Airport
Could we do it if we have 10 days trip with 7 days JR pass?

Certainly! It is not just possible, it is a beautiful trip to make. You can use the Azusa ltd express from Shinjuku station directly to Matsumoto. From there you can return to Tokyo but traveling to Kyoto is as good an option.
A 7 day JR Pass would make a great match for your itinerary, given that you would return to Narita Airport before it expires.
