I want to travel from Narita to Fukuoka on the day that I land in Japan (25 July). How difficult or easy will it be to get seats for two people as we will not be able to reserve in advance.

Hi,
Generally speaking it is easy to get seats - you can reserve them by going into the JR office. There are frequent departures all day long. With a good connection you can arrive in about 6 hours from Tokyo Stn, but you will need to make 1 transfer. But to get from Narita will take an hour into Tokyo, and if you arrive late in the day it'll be too late to get to Fukuoka on the same day.
For Fukuoka, there are many open parks, shopping, seaside historical areas, and urban neon. See this site as a good guide.
For Fukuoka, don't miss the Nanzoin Temple which is one of Japan's finest yet almost totally unknown to the outside world and completely FREE!

It won't be a problem. You can make seat reservations at Narita Airport and get on the first train you like.
1st class won't give you a better chance per-see but does offer a nice bit of extra comfort that can be nice if you make such a long trip.
