I believe I have most of this process understood but...

I order my 7 day pass...an exchange voucher is delivered.

I exchange it at a JR booth at a station and confirm start date. eg. Arrive 15th March, exchange but confirm start date as 21st March. Correct?

I then just get on a train on 21st and go where I want? Or do I have to arrange to be on a certain train eg. From Hakuba to Osaka? Not worried about reservations but do want to get on trains when I want to get on them.

Please confirm my understanding

From then, you can take any JR trains from the 21 first. You can already reserve seats from the day that you exchange the JR Pass. This is recommended for the longer trips.
