My daughter will be in Japan for 70 days. Is the 21 day pass only good for 21 consecutive days or a total of 21 days? What if she needs to use the train more than 21 days?

Hi there!
All JR Passes are counted in consecutive days, please keep this in mind when planning. However there is no limit to buying more JR Passes. The only condition is that you start using them within 90 days after purchase.
