Hi there,

Here are some answers:

1 & 2. Hikari bullet trains leave Tokyo station 2 times per hour during the day. Here's a list of the bullets from Tokyo to Kyoto. Note that you should use the Hikari class bullets in this list if you have a JR Pass.

  1. You do not have to book seats in advance - there is ample non-reserved seating. However seat reservations are free for JR Pass holders and can be made on the day just before travel. To make a seat reservation visit the JR ticket office just before you get on the train.
