Hi there,

Using a 7 day JR Pass works amazingly well for your itinerary. You can make great savings and it covers all the Shinkansen travel in your itinerary.

As for timetables and what time to get on the train, there are frequent services and you can take them almost anytime during the day. If you are looking for schedules, use www.hyperdia.com

Hope this helps!
