From Hiroshima to Kyoto

Dear JR Rail,

I would like to enquire on the possible routes I can take from Hiroshima to Kyoto, specifically Katsuragawa Station using the JR pass which I've already bought.

I tried to use hyperdia for possible routes, including through Shin-Osaka, but all the routes listed involve the Shinkansen Nozomi, which is not available for JR Pass holder right?

You are correct - you cannot use the Nozomi with the JR Pass. The trick with Hyperdia is to put in your starting & end points, then click on More Options and uncheck the box with Nozomi in it (for other routes uncheck airplane, private railway etc).
You then should get something like:
